2 cups flour
2 tsp. baking powder
¼ tsp. salt
½ cup butter
1 tsp. lemon zest
2/3 cup sugar
2 large eggs
4 tsp. poppy seeds
½ cup milk
Preheat oven to 375 degrees. Lightly brush a 12–cup muffin tin with butter and set aside. Mix all ingredients together and fill muffin tin 2/3's full sprinkle with sugar and bake for about 25 minutes.
NOTE: Poppy seed can go rancid easily and should be stored in the refrigerator or freezer
