Rye Bread (swedish Limpa Bread)

Ingredients

2 cups warm water
1 T. orange peel
1 T. yeast
1 T. salt¼ cup sugar (Br. If desired)
1 T. shortening (Crisco)
¼ cup molasses
1 ½ cups rye flour
2 ½ cups white flour

Directions

Into a mixing bowl or mixer, add warm water, yeast, sugar, molasses, orange peel, salt, shortening, then add the rye and white flour. (You may need to add more white flour to the desired consistency for bread—I usually add 1–2 cups more white flour.) Mix and knead and put into a bowl to rise about 1 hour. Punch down and divide into two loaves. Knead them a little and make two round balls of dough and put them onto a greased cookie sheet and let rise about 1 hour. Bake at 350 degrees for 20–25 minutes. Very good!! Our family loves this bread.
