Makes approx. 6 loaves
½ cup butter or margarine
2/3 Tbsp. salt
1 cup sugar
3 Tbsp. yeast
10 cups flour
6 ½ cups flour
(I use 10 cups of wheat flour, and 6 ½ cups of white flour. You may need to adjust the flour amount slightly depending on the weather, etc). Scald the milk (in a saucepan, heat milk with our stirring just until it is steaming, not quite simmering or boiling) and pour into your bread bowl. Add butter, sugar, salt. Cool to lukewarm. Sprinkle yeast over milk and gently stir in. (I use a small whisk) Let sit for 15 minutes. Add 10 cups flour, mix, then add remaining flour & mix well. (Don't be afraid to get your hands messy!!!) Knead until it “bounces back”. Raise until it doubles in bulk, raise again. Punch down and separate into loaves– raise again. Bake loaves in greased pans @ 350 degrees for 30 minutes.
