2 Cups warmed milk
Add:
½ Cup sugar
½ Cup shortening
2 Tbsp yeast
1 tsp salt
2 eggs
½ Cup mashed potatoes (4 Tbsp of potato flour and ½ Cup water)
Add 6 cups flour, enough to make a soft dough, Mix till smooth. Pour into deep greased bowl. Cover. Let rise till double in bulk. Roll dough out to ¾" thickness. Cut with doughnut cutter. Set on greased counter and let rise. Heat oil or melted shortening to 375. Fry doughnuts on one side then turn and fry on the other side to brown evenly. Drain on wire rack then dip in glaze. Drain on wire rack over a cookie sheet. Glaze: 4 cups powdered sugar
