Dry ingredients:
2 c. whole–wheat or white flour
2 c. wheat bran
1 tsp. salt
2 tsp. baking powder
Moist ingredients:
2 c. buttermilk
½ c. honey
1 Tbsp. almond flavoring
½ c. applesauce
Preheat oven to 350 degrees. Prepare 2 muffin pans with spray. Mix dry ingredients. Stir in moist ingredients. Add raisins if desired. Divide evenly into prepared muffin cups. Bake for 17 minutes or for 25 minutes if using large muffin pans. Center will spring back when touched. Remove from pans and serve warm or enjoy cold later.
