Chuck–a–rama Carrot Cake

Ingredients

1 ½ cups sugar
1 ½ cups flour
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. salt
1/3 cup walnuts, chopped
¾ cup raisins
1/3 cups oil
2 eggs
1 tsp. vanilla
3 ¼ cups carrots, shredded

Cream Cheese Frosting:
1 pound cream cheese
½ pound margarine
1 ¾ pounds powder sugar
2 tsp. vanilla

Directions

Peal & shred carrots. Place first 7 ingredients and mix. Add remaining ingredients. Pour mix into a greased round 9 inch cake pan and bake at 350 degrees for 45 minutes for until done. Let cool and frost with cream cheese frosting.
