Pineapple Upside Down Cake

Ingredients

1 box of yellow or white cake mix or a homemade cake.

Homemade Cake recipe:
2 2/3 c. flour
1 1/3 c. sugar
4 tsp. baking powder
1 1/3 c. milk
½ c. margarine or butter softened
2 eggs
2 tsp. vanilla

Directions

In a bowl, add flour, sugar & baking powder. Add milk, margarine, egg and vanilla. Mix with an electric mixer or by hand. Pour into a greased 13x9x2 cake pan. Bake at 350 degrees for 25–30 minutes.

*For the pineapple upside down cake, mix the cake you desire. In the bottom of the cake pan, melt 4 TBS. margarine, add 2/3 c. brown sugar to the margarine & spread this all over the bottom of the pan. Lay rings of pineapple in the sugar mixture in the pan. In the middle of the pineapple, add ½ a cherry in each slice. Do 4 whole pineapple rings down each side and cut two pineapple rings in half and put them down the middle with cherries there also. Pour the cake batter over the pineapple. Bake 30–35 minutes at 350 degrees. When cake is done, cool cake for 5 minutes. Loosen the edges with a knife and turn the cake upside down onto a large plate or flat pan. Yummy!!!
