1 c. butter (2 cubes)
4 Tbsp cocoa or ¾ cup peanut butter
4 cups ground zucchini
4 c. sugar
¾ cup light corn syrup
1 ½ tsp. vanilla
1 cup nuts
In a heavy saucepan, place butter and zucchini, stir and cook slightly add corn syrup, sugar and cocoa. Cook to softball stage. Remove from heat and let set for a few minutes. Beat with an electric mixer until it starts to set. Add nuts, pour into a greased pan. Cut when cool.
