2 Tbsp olive oil (divided)
2 chicken breast cubed
1 Carrot sliced diagonally (¼" pieces)
1 (10oz) pkg Broccoli
¼ Cup grated Parm Cheese
2 cloves minced garlic
12 oz angel hair pasta
2/3 Cup chicken broth
1 tsp dried Basil
1– Cook chicken in 1 Tbsp oil, drain on paper towel 2 — Heat remaining oil in same skillet, (begin heating water for pasta) add carrot, stirring for about 4 min. Add broc. And garlic. Cook stirring 2 min longer, 3 — Cook pasta. While cooking, add broth, basil, and parmesan to skillet. Stir to combine. Reduce heat and simmer for 4 min. Drain pasta. Place in a large serving bowl. Top with chicken and veg mixture. Serve immediately. Garnish with more parmesan cheese.
