Gingerbread

Ingredients

½ c. butter
1 c. sugar
½ c. molasses
2 eggs beaten
2 c. flour
2 tsp. baking soda
½ tsp. salt
½ tsp. ginger
½ tsp. cinnamon
1 c. boiling water

Cream butter and add sugar and mix. Add molasses and eggs and mix. Add dry ingredients and mix together. Add boiling water and mix. Pour into a 13x9x2 cake pan and bake at 350 degrees for 25–30 minutes. We like lemon sauce on top. We also like canned peaches with whipped cream on top.

Lemon Sauce:
1 ½ c. sugar
3 TBS. cornstarch
3 c. boiling water

Mix the sugar and cornstarch together. Boil the water. Add the boiling water slowly into the dry ingredients. Bring to a boil and thicken. Stirring constantly. Take off the burner and add: pinch of salt</

Directions

1 TBS. butter
3 TBS. lemon rind (optional)
9 TBS. lemon juice

Mix together. This is good over gingerbread. Makes 3 cups.
