½ cup butter (room temperature)
3 ¾ cup powdered sugar
1 Tbsp. whipping cream
1/8 tsp. peppermint extract (or favorite flavor)
food coloring, color of choice (optional)
In a mixing bowl, cream butter well. Blend in powdered sugar gradually, mixing until smooth. Add whipping cream, peppermint, and food coloring. Blend well. Roll batter (into a snake–like shape) and cut into bite size pieces. Shape pieces into mints shapes. Place on waxed paper and allow 30 minutes to harden. Store in an air tight container, in a cool place. Makes: 3 to 4 dozen mints.
