2 cups sugar
1 ½ cups oil
4 eggs
2 cups flour
1 ½ tsp. baking soda
1 tsp. baking powder
2 tsp cinnamon
½ tsp salt
3 cups grated carrots
1 ½ cup chopped nuts (optional)
Frosting:
1 box powder sugar
8 oz. cram cheese (room temperature)
¼ cup butter
1 tsp. vanilla
Mix sugar and oil together and add well beaten eggs. Mix well. Combine dry ingredients and stir until smooth. Add grated carrots and nuts. Bake in large pan or 3 9" cake pans at 325 degrees for 50 minutes.
