Ingredients

1 can whole green chiles
10 oz. grated Jack cheese
5 eggs
2 Tbsp. real butter
½ tsp. salt
1 tsp. pepper
½ tsp. cumin powder
Salsa — blended or (Tomato sauce with chili powder, cumin and hot pepper sauce)
Sour Cream

Directions

Spread ½ of the cheese on the bottom of a buttered 1 ½ quart casserole dish. Top cheese with a layer of chilies, opened and laid flat. Spread the other half of the cheese over the chilies. Beat eggs, butter, and spices very well and pour over cheese and chilies. Bake at 350 degrees for 30–40 minutes. Spread blended salsa over casserole, cut into squares. Serve with sour cream.
