Carmel Filled Chocolate Cookies

Ingredients

1 cup sugar
1 cup brown sugar
1 cup butter
2 tsp vanilla
2 eggs
2 ½ cup flour
¾ cup unsweetened cocoa
1 tsp soda
48 Rolo's (unwrapped–wouldn't want you to forget!)

Extra Ingredients for Cookie Construction~
½ cup chopped pecans
2–3 Tbsp sugar (I use large sugar granules–Maui Brand, from Hawaii)

Mixing Dough Directions~
In large bowl combine 1 cup sugar 1 cup brown sugar 1 cup butter beat until light and fluffy add vanilla and eggs blend well. Lightly spoon flour into cup, add cocoa & soda to sugar mix and blend well. Roll up dough in a piece of plastic wrap and put in the fridge for 30 min.

Cookie Directions~
Take a heaping tablespoon full of dough, put in hand and flatten out. Then wrap

Let cool on cookie sheet for at least 10 minutes before removing. YUMMY!!
