1 box of shell or manicotti (12 oz. pkg.)
4 c. cottage cheese (or ricotta cheese)
2 c. shredded mozzarella cheese
¾ c. grated Parmesan cheese
2 eggs beaten
1 TBS. chopped parsley
¾ tsp. dried oregano leaves or (ground)
½ tsp. salt
¼ tsp. pepper
½ tsp. crushed rosemary (if desired)
28 oz. Prego Spaghetti sauce or your own
Cook the pasta in salted water. Drain. In a bowl, mix the remaining ingredients except the Spaghetti Sauce. Stuff the shells or the manicotti pasta with the cheese mixture. Place the shells face up or the manicotti side by side in a casserole dish. Pour spaghetti sauce on top and cover and bake at 350 for 30–35 min. Serves 6–8 people. I use a covered glass dish and cook them in the microwave for about 10 minutes or until heated and the cheese is melted. Don't overcook.
