Fresh Peach Or Strawberry Pie

Ingredients

Baked Pie Crust
1 ½ quarts strawberries (or) 5 cups sliced peaches (5 medium peaches)
1 cup sugar
3 Tbsp. cornstarch
½ cup water
1 pkg. (3 oz.) cream cheese, softened

Directions

Prepare baked pie crust
Mash enough strawberries/peaches to measure 1 cup. Mix sugar & cornstarch in saucepan. Gradually stir in water and mashed strawberries/peaches. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute, cool.
Beat cream cheese until smooth. Spread into the baked pie shell. Fill shell with remaining strawberries/peaches. Pour cooked strawberry/peach mixture over top. Refrigerate about 3 hours or until set. Refrigerate any remaining pie.
