2 c. chicken broken into small pieces
1 c. chicken broth
¼ c butter
1/3 c. flour
1 ¾ c. milk
½ tsp. salt
¼ tsp. pepper
2 TBS. orange juice (concentrate–not diluted)
frozen or canned peas & carrots
1 can mushrooms if desired

Cook chicken & break into small pieces. Reserve one cup of chicken broth. In a saucepan, melt the butter. Take off the burner. Stir in flour and make a paste. Add milk and chicken broth slowly and stir until thickened. Add salt and pepper. Add orange juice and stir. Add peas and carrots and mushroom if desired. We like it on top of Susan's shortcake in the bread section.
