Ingredients

3 TBS. cornstarch
2 TBS. flour
1 c. sugar
½ c. water
3 egg yolks (unbeaten)
2 c. boiling water
Grated lemon rind
10 TBS. lemon juice
1 tsp. salt

Mix cornstarch, flour, sugar, & water. Add egg yolks to the sugar/flour mixture & mix. In a saucepan, boil the water and when it is boiling add the sugar/flour mixture to the boiling water and stir quickly. It will thicken quickly. Take off the stove. Add lemon juice and rind and mix. Pour into a baked pie shell.

MERINGUE:
3 egg whites
6 TBS. sugar
1 tsp. lemon juice

Beat egg whites until stiff. Add the sugar gradually while beating. Add lemon juice and mix well. Put the meringue on the pie—and bake at 350 degrees for 13–15 minutes or until the meringue is lightly brown.
