1 c. evaporated milk
1 c. water
4 TBS. flour
½ c. sugar
dash of salt
1 tsp. vanilla
2 egg yolks
2 egg whites
½ c. milk
Mix evaporated milk with water in the top of a double boiler, cover and heat until scalding hot (or in the microwave). Mix sugar, salt, flour, ½ c. cold milk and mix until smooth. Add egg yolks to sugar mixture and blend. Gradually add hot milk to the egg yolk mixture, stirring constantly until smooth and thickened. In a large bowl, beat egg whites until they stand in peaks. Add vanilla to milk mixture. Fold the hot mixture into the beaten egg whites. Cover and let stand for 10 minutes.
