4 half breast or 2 whole chicken breast (no bones)
Salt & onion
1 bunch of broccoli cut into bite size pieces
4 carrots cut in bite size pieces
2 small squash or zucchini (if you like)
soy sauce
water chestnuts if desired

Cut raw chicken up into small pieces. (I use scissors) Put 1 TBS of oil into hot deep pan and cook chicken in this & add onions & salt and cook until white and done. Cut each broccoli stalk about 1–3 inches down from the end and peel off the hard edge (skin like) of the stalk off all around. Cut the stalks into at least 4 pieces lengthwise. Cut into bite size pieces. Cut the carrots also to desired size you like. Put the broccoli and carrots into chicken and cover and cook until just tender not mushy. You may add a little water as these cook. I add a little salt and pepper to the vegetables when I first put them in. Add soy sauce to taste (& water if necessary). Add water chestnuts. Cook rice and serve the stir–fry over the rice.
