1 tsp. finely chopped onion
2 TBS. butter
1 ½ TBS. flour
1 tsp. salt
dash of pepper
1–17 oz. can of cream style corn
4 cups milk (I use 2 cans evaporated milk & add water to 4 cups)
2 cups of cooked cubed potatoes
1 cup cooked diced carrots (optional)
1 cup cubed chicken pieces (optional)
Sauté, onions in butter. Blend in flour, salt and pepper. Slowly add milk and stir until slightly thickened. Add corn, cooked potatoes, carrots & chicken. Serves about 5. Serve with corn bread.
