Buttermilk Pancakes:
2 c. flour
2 Tbsp. sugar
4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 c. buttermilk (2 c. milk + 8 tsp. vinegar)
2 eggs
2 Tbsp. oil
1/3 c. water (more for thinner pancakes)
Stir together first side of ingredients. Make a well in dry ingredients & add wet ingredients. Fold together — don't over mix.
