1 Cup stewed tomatoes, chopped
1 egg, beaten
¾ cup quick oats
1 medium carrot grated
2 ½ pounds lean ground beef
1 envelope onion soup mix
1 celery rib, diced
2 bacon strips, cooked and crumbled
Ketchup
In a large bowl, combine the first 7 ingredients. Crumble beef over mixture and mix well. Shape into a loaf in a greased 9x13 pan. Drizzle with ketchup. Bake uncovered, at 350 for 1 ½ hours or until meat is no longer pink and thermometer read 160. Using 2 large spatulas, carefully transfer meat loaf to a serving platter.
