1/2 cup salted butter 1/2 cup applesauce 1 cup packed light brown sugar 1/2 cup white sugar 2 eggs 1 & 3/4 tsp vanilla extract 1/4 tsp almond extract 1 & 1/4 cups all-purpose flour 1/2 cup wheat flour 1 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 3 cups quick-cooking oats 1/2 cup semi-sweet chocolate chips 1/2 cup milk chocolate chips
Preheat oven to 335 degrees F.
In a large bowl, cream together butter, applesauce, brown sugar, white sugar, vanilla, and almond extract. Whip well for a few minutes. Beat in eggs.
In a separate bowl, combine flour, baking soda, salt, & cinnamon.
Gradually add cooking oats and flour mixture to egg mixture and mix to combine. Add chocolate chips and mix well. Dough will be slightly sticky.
Roll into golf-ball sized balls and bake on ungreased cookie sheet for about 14-15 minutes. Tops of cookies will brown just slightly when they are done. Allow cookies to sit for 5 minutes on hot cookie sheet before removing.
